PLATES: 3 SERVINGS

TIPP: WASH ALL THE FRUITS WELL

Ingredients

  • 250 gr. quinoa

  • 375 ml. fresh water

  • 5 tsp. salt

  • 1 handful of cashews

  • handful of cherry tomatoes

  • 1/2 cucumber diced

  • Olive oil

  • 2 tsp. oregano spice

  • 2 tsp. pepper

  • 2 tsp.basil spice

  • 1 Lemon

  • 500 gr. frozen edamame

Preparation steps

STEP 1

​

Heat 375 ml. of pure water in a small pot at medium heat and add 2 tsp. of salt. After 5 min when the water is hot add the 250 gr. of quinoa.

STEP 2

​

While the quinoa is cooking make sure to prepare all the fresh veggies for the salad. So cut the half cucumber into slices and then dices and half the cherry tomatoes  and cut of the ends. Place the veggies in a big bowl.

 

STEP 3

Now heat a frying pan with some fresh olive oil and when heated then pour the frozen edamame into it and fry it for about 5 min, while constantly checking that they don't burn. Add the edamame to the veggie bowl.

STEP 4 

​

After you've finished the preparation of the veggies then check if the quinoa is soft enough and ready to consume. If so then take a sieve and pour the quinoa into it. If theres rest water it is going to rinse through.

STEP 5

​

Now pur the quinoa from the sieve into the big bowl with the veggies and mix it well throuh with a spoon/cooking spoon. Add 2-3 tbsp. olive oil to the mixture and stir through. Add 2 tsp. pepper, 2 tsp. basil spice and 2 tsp. oregano spice,  3 tbsp.  salt and 1 handful cashews and some olive oil to the bowl and stirr.

 

Now enjoy the meal !
