PLATES: 10 SERVINGS

Ingredients

Preparation steps

Spelt Bread:

  • 500 gr. spelt flour

  • 1 tsp. sea salt

  • 3 tbsp. sesame seeds

  • 1 tsp. pumpkin seeds

  • 1 package of dry yeast

  • 400 ml. lukewarm pure water

Hummus:

  • 800 gr. garbanzo beans (chickpeas)

  • 2 cloves garlic minced

  • 60 ml. (4 Tbsp.) tahini

  • 3 tsp. sesame oil

  • 1 tsp. sesame seeds

  • 60 ml tablespoons fresh lemon juice

  • 2 1/2 Tbsp extra virgin olive oil plus extra for drizzling if desired

  • 1 tsp. ground cumin

  • 1 tsp. sea salt

  • 1 tsp. black pepper

  • 1 tsp. cayenne pepper

  • 100 ml. lukewarm pure water (to soften)

STEP 1

Take a big bowl and add into it 500 gr.spelt flour,

1 tsp. sea salt,1 package dry yeast, 1 tbsp. sesame seeds and 400 ml. lukewarm pure water. Then take a hand mixer and mix the dough through until it has a very sticky texture. After that let the dough rest for 30 min. and cover it with some foil and a kitchen towel. Also, let it stand in a warm place.

 

STEP 2

 

Now while the dough rises, let's prepare the fresh hummus: Take the bowl of the hand mixer and put into it:

 

  • 800 gr. garbanzo beans (chickpeas) - rinsed

  • 2 cloves garlic minced

  • 60 ml. (4 Tbsp.) tahini

  • 2 tsp. sesame oil, 60 ml tablespoons fresh lemon juice

  • 2Tbsp extra virgin olive oil

  • 1 tsp. ground cumin, 1 tsp. sea salt, 1 tsp. black pepper

  • 100 ml lukewarm pure water (to soften)

STEP 3 

 

Now brush the tasty fresh hummus out of the hand mixer (pull the plug before that) and pour 2 teaspoons of olive oil above it. you can then sprinkle it with 1 teaspoon of cayenne pepper and 1 teaspoon of sesame seeds.  Voila!

STEP 4 

 

After 30 min the bread should be ready for the next steps. So let's form (if it's too sticky put some little more dough to it) a loaf with the bread at first and place it on the backing tray.

STEP 5

 

Then brush a fresh teaspoon of olive oil on the upper side of the bread and sprinkle it with 1 teaspoon of sesame seeds and 1 teaspoon of pumpkin seeds. After that put it for another 30 min. at 200 °C into the oven. with circulating air.

​

STEP 6 

 

Take out the fresh bread and cut a slice and serve with some of the fresh self-made hummus and some additionals as you like (olives, cherry tomatoes, watercress, and other Dr. Sebi alkaline foods).
