Ingredients

Preparation steps

  • 125 gr. quinoa

  • 250ml. pure water

  • 600 gr. cherry tomatoes

  • 1 yellow bell pepper

  • 100 gr. mushrooms

  • 1 diced onion

  • 1 tbsp. tomato paste

  • 100 gr. olives(green,black,mixed)

  • 2 tbsp. virgin olive oil

  • 5 tsp. sea salt

  • 2 tsp. black pepper

  • 2 tbsp. dried basil spice

  • 5 tsp. cayenne pepper

  • 1 tbsp. sesame seeds

STEP 1

Take 125 gr. of quinoa and wash it under lukewarm water. Then cook the quinoa in a small pot with 250 gr. pure water with 1 tsp of sea salt for about 8 min. with a closed lid. Then remove the quinoa from the heat place and rinse the rest water in case it's already soft.

STEP 2

 

Cut the cleaned mushrooms and washed yellow bell pepper into fine slices. Then dice the onion.

 

STEP 3 

Take a mixer and mix 500 gr. of fresh washed cherry tomatoes and the diced onion in it. Spice it with 4 teaspoons of sea salt, 2 teaspoons of black pepper and 5 teaspoons of cayenne pepper.

 

STEP 4 

Now that you have a rose-looking tomato cherry tomato paste pour it into a big pot and heat it. Throw the sliced mushrooms into it.

Add the last 100 gr. of washed cherry tomatoes and 2 tablespoons of dried basil spice to the sauce in the pot. Let it simmer until it's hot then add 1 tablespoon of tomato paste and 2 tablespoons of olive oil.


STEP 5

 

After your cherry tomato paste is ready and the quinoa is finished cooked serve it on a plate and decorate it with the sliced bell pepper and the olives. Voila!
